Preparation for Chilli Potato
- Prepare the Potatoes:
- Peel and cut the potatoes into thin strips or wedges. Soak them in cold water for 10-15 minutes to remove excess starch. Drain and pat them dry using a kitchen towel.
- Coat and Fry the Potatoes:
- In a bowl, mix cornflour, all-purpose flour, red chili powder, and salt. Toss the potato strips in this mixture until they are well-coated.
- Heat oil in a deep pan and fry the coated potatoes in batches. Fry until they are golden and crispy. Remove and place on a paper towel to drain excess oil.
- Prepare the Sauce:
- In a separate pan, heat 1-2 tablespoons of oil. Add chopped garlic, ginger, and green chilies. Sauté for a few seconds until fragrant.
- Add diced onions and bell peppers. Stir-fry on high heat for 2-3 minutes, keeping the vegetables slightly crunchy.
- Lower the heat and add soy sauce, red chili sauce, tomato ketchup, and vinegar. Mix well to combine all the flavors.
- Toss the Potatoes:
- Add the crispy fried potatoes into the sauce mixture and toss well to coat them evenly. Ensure the sauce clings to the potatoes for a burst of flavor in every bite.
- Garnish and Serve:
- Garnish with freshly chopped spring onions and a sprinkle of sesame seeds. Serve hot.
Tips for Perfect Chilli Potato:
- Crispiness: Ensure the potatoes are dry before coating them with flour. Fry in small batches to maintain crispiness.
- Spice Level: Adjust the amount of chili sauce and green chilies based on your spice tolerance.
- Healthier Version: For a healthier version, bake or air fry the potato strips instead of deep frying.
