Ingredients for Chilli Potato

  • Potatoes: 4 medium-sized (cut into wedges or thin sticks)
  • Cornflour: 2 tbsp
  • All-purpose flour: 1 tbsp
  • Red chili powder: 1 tsp
  • Salt: To taste
  • Oil: For deep frying
  • Garlic: 1 tbsp (finely chopped)
  • Ginger: 1 tbsp (finely chopped)
  • Green chilies: 2 (slit)
  • Onion: 1 medium (diced)
  • Bell peppers: 1 medium (diced)
  • Soy sauce: 1 tbsp
  • Red chili sauce: 1 tbsp
  • Tomato ketchup: 1 tbsp
  • Vinegar: 1 tsp
  • Spring onions: 2 tbsp (chopped, for garnish)
  • Sesame seeds: 1 tsp (optional)

Preparation for Chilli Potato

  1. Prepare the Potatoes:
    • Peel and cut the potatoes into thin strips or wedges. Soak them in cold water for 10-15 minutes to remove excess starch. Drain and pat them dry using a kitchen towel.
  2. Coat and Fry the Potatoes:
    • In a bowl, mix cornflour, all-purpose flour, red chili powder, and salt. Toss the potato strips in this mixture until they are well-coated.
    • Heat oil in a deep pan and fry the coated potatoes in batches. Fry until they are golden and crispy. Remove and place on a paper towel to drain excess oil.
  3. Prepare the Sauce:
    • In a separate pan, heat 1-2 tablespoons of oil. Add chopped garlic, ginger, and green chilies. Sauté for a few seconds until fragrant.
